Ginger Syrup and Honey Syrup

This week I a made video on how to make a Penicillin. It calls for a ginger syrup so I thought I'd write down the recipe here.

1 cup of sugar, water and chopped ginger

1 Cup of- Water, Sugar and Chopped Ginger.

On medium heat, dissolve the sugar in the water but don't boil it (tada, you now have a simple syrup!)

Once sugar is dissolved, pour it (while still hot) in a blender with the chopped ginger.

Blend it until fully smooth.

Strain it and refrigerate for up to 2 weeks.

If you don't want to use this in a cocktail, why not make a mocktail out of it? Just add some lemon juice and club soda (equal parts depending on taste) and you'll have a delicious, refreshing drink!

For the honey syrup you just want to dilute it a little bit so that it is easier to work with in cocktails. Do a 3:1 honey to water ratio. Fastest way to do this is the same way we made the simple syrup above. Pour honey and water in a pot and heat it until it's dissolved. Don't boil it. Easy peasy.
