Pineapple Hot Toddy

Oh baby, it's cold outside. It's time for my Pineapple Hot Toddy. Or is this a hot Rum Punch? Who really cares, it's delicious and that's all I care about! Tropical flavors in a hot package. If I can't I can't be on a hot beach, I'll settle for a hot drink tasting like beach. Also, I show you how to make ginger syrup that you can use for many different cocktails and mocktails. And don't forget, January 11 is National Hot Toddy Day ;)

Pineapple Hot Toddy

1/2 oz (15ml) Ginger Syrup

1/4 oz (7.5ml) Cinnamon Syrup

3/4 oz (22.5ml) Lemon Juice

1 1/2 oz (45ml) Plantation Pineapple Rum

Build in heat resistant glass and top with hot water. Garnish with cinnamon stick and lemon twirl. Have a sip and pretend you're on a beautiful island somewhere.

Cinnamon Syrup: Dissolve 1 cup sugar in 1 cup hot water on the stove. Put 3-5 cinnamon sticks in let it simmer for a minute or two. Let cool and let the cinnamon sticks in for as long as you wish, and until you reach sufficient cinnamon flavor. I tend to just leave at least one stick in.
