The Clover Club Cocktail

The Clover Cocktail is one of the prettiest classic cocktails out there. With that pink hue, frothy head and a raspberry to garnish, it's just so elegant! Traditionally made with egg white to create that special texture and froth but I'm making it with Aquafaba instead. Aquafaba is the water from a can of chickpeas. Interesting right?! And to be honest, I think the result is even better than egg whites. Plus there is no mess with cracking eggs and risking to get yolk or pieces of the shell in the drink. You need to try this! Even for your Whiskey Sour, Pisco Sour or maybe a Gin Fizz.

3 Rasberries

3/4 oz (22.5ml) Simple Syrup

3/4 oz (22.5ml) Lemon Juice

1/2 oz (15ml) Aquafaba

1/2 oz (15ml) Dry Vermouth

1 1/2 oz (45ml) Gin
